White Chocolate Framboise Blondies

One of my favorite desserts to make for valentines day are chocolate covered strawberries. They are quick and super easy to put together.

This year however I’ve decided to switch things up, I wanted to make something different. So I came up with a slightly dressed up version of a blondie. It stars off with a classic blondie base studded with white chocolate chips, then it gets topped off with a layer of white chocolate framboise cheesecake. Voila!

White Chocolate Framboise Blondies

Blondie Layer
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 8 ounces unsalted butter, room temperature
  • 1½ cups light brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1½ tablespoons light corn syrup
  • ½ cup white chocolate chips
Cheesecake Layer
  • 1 egg
  • 1 tablespoon vanilla
  • 12 ounces cream cheese
  • ¾ cups confectioners sugar
  • 2 tablespoons white chocolate liqueur
  • 2 tablespoons framboise liqueur
  • 3 drops red food coloring (optional)
  • Assorted sprinkles for decorating (optional)
Blondie Layer
  1. Line a 9x13 baking dish with aluminum foil leaving a slight overhang on the two widest sides.
  2. In a bowl whisk together flour, baking powered and salt. Set aside.
  3. Using a stand mixer, cream butter, sugar, and light corn syrup on medium speed until light and fluffy. Reduce speed to low, add eggs one at a time waiting until first is incorporated before adding the next. Add vanilla.
  4. Slowly add dry ingredients. Once dry ingredients are incorporated add white chocolate chips.
  5. Transfer batter to prepared baking dish and spread evenly with an offset spatula, warning batter is very dense so this may require a little muscle. Refrigerate dish for 30 minutes.
  6. Preheat oven to 325 degrees F while blondie dough is chilling in the refrigerator.
  7. Bake blondie for 20-25 minutes.
  8. While blondie is baking prepare the cheesecake layer.
Cheesecake Layer
  1. In a medium bowl beat together cream cheese, egg, vanilla, sugar white chocolate liqueur, framboise liqueur, and red food coloring (if using).
  2. Once blondie base has finished baking. Spread the cheesecake layer evenly over the top of the blondie.
  3. Return blondie to the oven and bake for an additional 20-25 minutes.
  4. Allow blondie to cool completely before slicing. Decorate with sprinkles assorted sprinkles.
