Last Saturday our friends Cindy and Ian invited us over for dinner. Now, if someone know’s how to throw a dinner party it’s these two. Not only are Cindy and Ian wonderful hosts, she is an amazing cook and mixologist, and he knows how to rock the grill like there is no tomorrow!
Cindy happens to be the brilliant mind behind today’s cocktail. Just wait ’till you try it, you’ll think you are swaying in a hammock suspended by two palm trees on a cool afternoon somewhere in the Caribbean.
Enjoy!
- 1 ounce UV Coconut Vodka
- 1 ounce Pinnacle Whipped Cream Vodka
- 3 ounces Minute Maid Limeade
- Combine ingredients into a cocktail shaker filled half-way with ice. Shake for 30-40 seconds and serve into a martini class.
- Garnish with a wedge or slice of lime
See what I mean? Do they know how to entertain or what?
The main course was this incredible Pumpkin Lasagna, I’m still dreaming about it!
For dessert we all had a slice of my birthday gift to Ian, Pumpkin-Onion cheesecake (his favorite from my repertoire), which they chose to freeze and save it for this special dinner.
Since we were having “Birthday” cheesecake, we had to sing “Happy Birthday”!
My baby…
After dinner we all retreated to the fire-pit where we finished up our wine from dinner, and enjoyed an after dinner drink, or digestif of Chocolate infused tequila.
Not a bad way to call it a night right?

Sounds like a wonderful dinner party! The drink sounds terrific!
Awesome dinner party-Cindy is a great host! Love the drink-perhaps it will be part of a happy hour..but I will need to find that whipped cream vodka first!
Thanks, Tina! Pinnacle also makes a “Cake” vodka. I’m going to try that with the coconut and lime next – as soon as I can find it. I imagine it will taste amazing!
What a gorgeous cocktail and such a fabulous dinner party! Love your pictures!!
I am honored… Made it last night for Art and Missy. They loved it!
You know you are the hostess with the mostess!
You are someone I want to drink with!
I love that “because it’s 5 o’clock somewhere.” I find myself saying that often lately!
Ok, I am jealous that I wasn’t at this dinner party, lol. Pumpkin lasagna?!! And that cocktail looks SO good right now!
Cindy, I know where you got the cooking skills from but the presentation is yours alone!!
Everything looked lovely!! mkp
Thanks Mary Kay, but you definitely deserve some credit. I think I absorbed some skills on how to put together an elegant presentation from you when I was a teenager!
Heavenly.
No kidding, beautiful setup!
And I do the same thing w/my 14 year old son…still my baby
Your hosts sure know how to decorate a beautiful table! Mmm…that pumpkin lasagna has my attention – sounds so good. Gorgeous cocktail – must smell heavenly with that coconut vodka. I could have two!
Hope you’re having a good summer!
Sounds like a beautiful evening and boy does that Pumpkin Lasagna sounds amazing too!
Will the host be willing to share that pumpkin lasagna recipe too? I love the appetizer of apricots with cheese (is that goat cheese?!) and topped with almonds. Details, details please!
Hi Liz, I will definitely ask her… stay tuned.
The host will! Lasagna recipe to be posted shortly… The appetizer is 1/2 goat, 1/2 cream cheese mixed with fresh chopped basil dolloped on a dried mediterranean apricot topped with a roasted almond and drizzled with honey.
Thanks so much Cindy! Liz, I’ve added a link to Cindy’s Lasagna recipe right below the pic. – Josie
