Lime in the Coconut

Last Saturday our friends Cindy and Ian invited us over for dinner. Now, if someone know’s how to throw a dinner party it’s these two. Not only are Cindy and Ian wonderful hosts, she is an amazing cook and mixologist, and he knows how to rock the grill like there is no tomorrow!

Cindy happens to be the brilliant mind behind today’s cocktail. Just wait ’till you try it, you’ll think you are swaying in a hammock suspended by two palm trees on a cool afternoon somewhere in the Caribbean.

Cindy’s Lime in the Coconut

Recipe type: Cocktail
Serves: 1

Ingredients
  • 1 ounce UV Coconut Vodka
  • 1 ounce Pinnacle Whipped Cream Vodka
  • 3 ounces Minute Maid Limeade

Instructions
  1. Combine ingredients into a cocktail shaker filled half-way with ice. Shake for 30-40 seconds and serve into a martini class.
  2. Garnish with a wedge or slice of lime

Cindy's Pumpkin Lasagna

The main course was this incredible Pumpkin Lasagna, I’m still dreaming about it!

Josie's Pumpkin-Onion Cheesecake

For dessert we all had a slice of my birthday gift to Ian, Pumpkin-Onion cheesecake (his favorite from my repertoire), which they chose to freeze and save it for this special dinner.

Since we were having “Birthday” cheesecake, we had to sing “Happy Birthday”!

After dinner we all retreated to the fire-pit where we finished up our wine from dinner, and enjoyed an after dinner drink, or digestif of Chocolate infused tequila.

Not a bad way to call it a night right?

Awesome dinner party-Cindy is a great host! Love the drink-perhaps it will be part of a happy hour..but I will need to find that whipped cream vodka first!

Thanks, Tina! Pinnacle also makes a “Cake” vodka. I’m going to try that with the coconut and lime next – as soon as I can find it. I imagine it will taste amazing!

Your hosts sure know how to decorate a beautiful table! Mmm…that pumpkin lasagna has my attention – sounds so good. Gorgeous cocktail – must smell heavenly with that coconut vodka. I could have two!

Will the host be willing to share that pumpkin lasagna recipe too? I love the appetizer of apricots with cheese (is that goat cheese?!) and topped with almonds. Details, details please!

The host will! Lasagna recipe to be posted shortly… The appetizer is 1/2 goat, 1/2 cream cheese mixed with fresh chopped basil dolloped on a dried mediterranean apricot topped with a roasted almond and drizzled with honey.
